Step instructions how to taste honey describe its flavor and determine what other flavors pair best with a particular honey Also included are simple recipes such as dressings marinades uick and easy desserts and beverages Beautifully illustrated and designed The Honey Connoisseur is the perfect book for foodies and locavores alike Praise for  The Honey Connoisseur Of all the near perfect food we generally take for granted honey suffers than most except for cheese The Honey Connoisseur lays it all out on the table; Marina Marchese and Kim Flottum tell the whole story including its dark side in an elouent style The reader will never look at the honey jar the same way Max McCalman author of Mastering Cheese Cheese Connoisseur's Guide to the World's Best and The Cheese Platebr Eureka This is the book I've been looking for As a restaurateur who has traveled high and low in search of the world's finest wines I have always respected the This book opened this reviewer s eyes so to speak as one never imagined that there was so much variety in honey Of course when you think about it and rationalise it it is fairly obvious but unless you are a particular fan of honey you might be forgiven for just picking up whatever honey is cheapest from the store when you need honey for your cooking This reviewer is guilty as chargedSo this book presents a very detailed yet lightly written look at the rich diverse world of honey considering over 30 variants of honey that are available in the United States The book still has a lot to offer for those who live further afield since this book is packaged full of knowledge Unfortunately for this reviewer who doesn t like flying insects there are far too many very lifelike pictures of bees in close up One can admire the excellent photographs for sure even with a bit of a funny feeling in one s tummy It probably didn t help to read that bee venom stings is used by some as a treatment therapyThis book is truly a celebration of honey Whether it is an examination of how honey is made how its taste is influenced or the darker side of honey fraud and impurities you cannot fail to find a LOT of interesting things you never knew unless of course you live and breath honey as the authors seem to do and even thenConsideration has even been given to the different tastes of honey how different honey types can be paired with different foods and of course a few recipes that use this rather vital ingredient It is a shame that there were not recipes involving honey in this book Compared to the mass of detail and comprehensiveness of every other chapter the recipe section seemed rather short in comparison The book should also include a glossary and index which if it follows the rest of this book will be very comprehensive but this review copy did not feature this so no opinion may be given as to its completeness and thoroughnessThis is a truly fascinating book even for someone who uses honey passively Maybe it might even tempt the reader to be a little adventurous It is rare that one finds a book like this which manages to transform a relative passive disinteresting subject to a rather fascinating enthralling gripping read Hopefully the authors can team up with a cook use their honey expertise and produce even great recipes that can show the versatility and flexibility of this sticky substanceThe Honey Connoisseur Selecting Tasting and Pairing Honey With a Guide to More Than 30 Varietals written by C Marina Marchese Kim Flottum and published by Black Dog and Leventhal Publishers ISBN 9781579129293 196 pages Typical price USD2695 YYYY This review appeared in YUMfi and is reproduced here in full with permission of YUMfi YUMfi celebrates the worldwide diversity of food and drink as presented through the humble book Whether you call it a cookery book cook book recipe book or something else in the language of your choice YUM will provide you with news and reviews of the latest books on the marketplace
